The art of drying persimmons, also known as Hoshigaki, is a beautiful meditation on preservation. Fruit is carefully harvested and the stem is wrapped, before being set to hang for many months until sugars rise from the flesh and encrust the exterior.
We are celebrating this technique with an afternoon devoted to the persimmon. You will plant trees at our winery, hang hoshigaki and enjoy a five-course harvest dinner prepared by Chef Timothy Wastell, paired with wines hand-selected by Maggie.

Rare Willamette Valley bottlings from winemaker Maggie Harrison

The Core Tasting features a rotating selection of four Antica Terra and Lillian wines served with house-made hen liver terrina.

The Collective Tasting features a selection of our wines and those that sustain our creative process. The tasting will feature nine wines: our current release and a rotating selection of inspirational bottlings from around the world. The tasting can cover a vast range; from grower Champagne and Grand Cru Burgundy, to esoteric bottlings made from rare, indigenous grapes and from winemakers who employ innovative techniques that advance the limit of flavor. We serve the wines from a state of the art Enomatic Wine System where they are preserved under surgical grade argon. Wines are served alongside a curation of seasonal plates from Chef Timothy Wastell.
